Almond ice cream: the simple recipe to prepare it at home

Il almond ice cream it’s a dessert fresco, delicious and easy to prepare even at home. During the hot summer days there is nothing better than a good home made ice cream: few ingredients, a pinch of manual skills and that’s it. It is prepared with milk, fresh cream, sugar, vanilla and almonds; the latter come slightly toasted in a pan before being used to give the preparation even more taste and aroma. Creamy and irresistible, it does not freeze in the freezer and is perfect for any occasion: an end of a meal with friends, a genuine snack or an unusual breakfast, as required by Sicilian tradition. In this case you must strictly accompany it with the brioche with tuppo.

In our recipe we used the ice cream maker, but you can also prepare it without: just transfer the mixture into a loaf pan and place it in the freezer for 3 hours, stirring every half hour to break the ice crystals and get the right consistency. Once ready, serve it in small glasses or bowls and garnish with chopped almondschocolate flakes, a compote of fresh fruit, crumbled biscuits or with the classic ice cream wafers.

How to make almond ice cream

Transfer the almonds to a small pan 1 and lightly toast them.

In a kitchen mixer, pour half the sugar 2.

Add the almonds 3 and finely chop.

In a saucepan, collect the rest of the sugar, cornstarch and vanilla 4.

Mix the milk with the cream in a jug and pour into the saucepan, mixing with a whisk 5.

Also add the chopped almonds 6, stir again and put on the fire with the flame to the minimum. Cook while continuing to stir until the mixture has thickened slightly.

Pour the preparation into a jug 7let it cool and transfer to the refrigerator for at least two hours.

Operate the ice cream maker and pour the now very cold mixture 8.

After about 40 minutes the ice cream will be creamed 9. Transfer it to an airtight container and place in the freezer until ready for use.

At the moment of consumption, transfer it to the bowls, add some chopped almonds and serve 10.


If you only have the almonds with skindip them in hot water for 10 minutes, rub them with a cloth to remove them, and then dry them in the oven.

Instead of the vanilla bean, you can add a few drops of vanilla extract, cinnamon or powdered cardamom. Instead of whole almonds, you can use almond flour directly.


Almond ice cream can be kept in the freezer, closed in an airtight container with a lid, up to a week.
