Il almond ice cream it’s a dessert fresco, delicious and easy to prepare even at home. During the hot summer days there is nothing better than a good home made ice cream: few ingredients, a pinch of manual skills and that’s it. It is prepared with milk, fresh cream, sugar, vanilla and almonds; the latter come slightly toasted in a pan before being used to give the preparation even more taste and aroma. Creamy and irresistible, it does not freeze in the freezer and is perfect for any occasion: an end of a meal with friends, a genuine snack or an unusual breakfast, as required by Sicilian tradition. In this case you must strictly accompany it with the brioche with tuppo.
In our recipe we used the ice cream maker, but you can also prepare it without: just transfer the mixture into a loaf pan and place it in the freezer for 3 hours, stirring every half hour to break the ice crystals and get the right consistency. Once ready, serve it in small glasses or bowls and garnish with chopped almondschocolate flakes, a compote of fresh fruit, crumbled biscuits or with the classic ice cream wafers.

Advice
If you only have the almonds with skindip them in hot water for 10 minutes, rub them with a cloth to remove them, and then dry them in the oven.
Instead of the vanilla bean, you can add a few drops of vanilla extract, cinnamon or powdered cardamom. Instead of whole almonds, you can use almond flour directly.
storage
Almond ice cream can be kept in the freezer, closed in an airtight container with a lid, up to a week.
