There Apple and mascarpone cake it’s a dessert cupboard super gourmet, the even richer variant of the classic apple pie. Soft and fragrant, it hides many small pieces of juicy apples inside and is perfect for breakfast, to dip in a cup of milk, for an afternoon break with a good tea or whenever we feel like it. with a nice slice of homemade cake.

Accompanied by a delicate custard, it can also be enjoyed dessert at the end of a meal for a special festive occasion. THE mascarpone in the dough, it replaces both milk and butter (or oil), since, being very full-bodied and with the right percentage of fat, it is enough on its own to give the cake a soft and pleasantly moist consistency.

Making the apple and mascarpone cake is very easy and quick: just beat the eggs with the sugar and vanilla, add the mascarpone and flour with the baking powder, mix with an electric mixer and finally add the peeled and diced apples.

We used a 22 cm diameter mold to obtain a tall cake but, if you prefer, you can increase the diameter of the mold. Once the mixture is poured into the mould, the apple slices are arranged radially on the surface and baked in the oven at 180°C for approximately 40 minutes. sprinkled with a little Granulated sugarfor an even more inviting look, it will win over young and old alike.

How to make an apple and mascarpone cake
