Apricots in syrup: the recipe for the simple and delicious summer preserve

The apricots in syrup I’m a conserva simple and delicious, perfect to prepare during the summer season. This is one of the best ways to preserve these fragrant and juicy fruits, and then have them available during the winter months. Less known than canned peaches, they are just as easy and quick to prepare: just wash the apricots, remove the stone and then cook them in one syrup based on water, sugar and lemon zest. Once ready, they must be placed in sterilized glass jars and then left to cool upside down, to create the vacuum packed and not run into any dangers.

For added security, proceed with second pasteurization: place the jars with the apricots, well wrapped with clean tea towels, in a pot full of water and boil for about half an hour. Then drain and let them cool completely. If you like, you can flavor the apricots in syrup with the cinnamon, vanilla, cardamom seeds or a drop of maraschino. Sweet and meaty, you can use them per pack tortepies and plumcakes, to garnish a cup of ice cream, a spoon dessert, white yogurt or you can enjoy them on toasted wholemeal bread for breakfast, garnishing everything with a drizzle of honey and hazelnut cream.

How to prepare apricots in syrup

Thoroughly wash the apricots, half of April, remove the stone and dip them in a bowl of water and lemon juice 1.

Fill a saucepan with 1 liter of water and pour in the sugar 2.

Add the lemon zest 3.

Arrange the apricots 4.

Put on the fire and let it cook for a maximum of 5 minutes 5. The water must not boil.

Drain the apricots and let them cool 6.

Meanwhile, reduce the syrup by simmering it for 10 minutes. Turn off and set aside 7.

Put the apricots in a sterilized jar 8.

Pour the syrup and cover the apricots leaving about 1 cm of the edge free 9.

Close the jar 10. Leave to cool upside down in a dry place, away from sources of light and heat. Let it rest for at least a month.

After this time, enjoy your apricots in syrup to taste 11.


Apricots in syrup can be tasted approx a month after their preparation. Once the jar is opened, it should be kept in the refrigerator for a maximum of one week.
