Illinois baked cod it’s a second course simple, tasty and easy to prepare. Not to be confused with dried cod, cod is preserved in salt and, before proceeding with the recipe, it must be soaked in cold water for at least 2-3 days, taking care to change the water every 6 hours.

You can decide to desalinate it at home or, if you have little time available, buy it already desalted. After this step, all you have to do is cut it into slices, place it on a baking tray and dress it with an emulsion made from extra virgin olive oil, chopped garlic and parsley, salt and pepper; add black olives and pickled capers, then cook in the oven at 180°C for about half an hour.

Tasty and fragrant, baked cod is ideal for any dish lunch either family dinner, to serve with a seasonal garnish and a few slices of fresh homemade bread. How to prepare baked cod

First, soak the cod in cold water for 2-3 days, taking care to change it 2 times a day, and rinse it well before soaking. 1.

Chop the parsley, washed and dried, along with a small clove of garlic 2.
