Baked potato sticks: the recipe for a delicious appetizer

I baked potato sticks they are simple and delicious starters, crispy on the outside and soft on the inside, excellent as antipasti oh finger food for an aperitif. In our recipe, we made them with boiled potatoes, cornstarch, cheese, oregano, salt and pepper. Once the dough is prepared, it will be cut into sticks which will be placed on the dish and baked for about half an hour.

Here’s how to make them in just a few steps.

How to make baked potato sticks

Peel and cut the potatoes into pieces. Cook them in water for about 20 minutes.

Once they become soft, mash them in a colander to obtain a puree.

Add cornstarch, oregano, salt, pepper, parsley and stir to combine ingredients.

Pour the grated cheese and knead to obtain a compact mixture.

Make small portions of dough and roll them into sticks.

Pour a little olive oil on the parchment paper and place the potato sticks. Brush with more oil and sprinkle with Parmesan.

Bake in a static oven at 180°C for 30 minutes.


You can flavor the mixture with the spices not herbs which you prefer or which you have.


You can keep potato sticks in the oven for A day in an airtight container, although it is advisable to consume them immediately after preparation, to enjoy them at their best.
