The basil mayonnaise is the fragrant and delicious variant of the classic mayonnaise, the queen of sauces. It is prepared with a few simple ingredients: egg yolks, extra virgin olive oil, lemon juice, salt, pepper and, once you have obtained a smooth and full-bodied cream, add the fresh basilic. Fragrant and with an enveloping consistency, it is excellent with salads, especially that of rice, potatoes and cold pasta. The fresh flavor of basil will also give an extra kick to grilled fish and vegetables, and you can use it to make the filling of any sandwich or flatbread moist and creamy.
For the success of your basil mayonnaise, we advise you to use very fresh eggs and at room temperature. If you prefer a less strong and intense flavor, replace the extra virgin olive oil with that of Sun-flower seeds; to promote emulsion and prolong the preservation of the mayonnaise, you can add 30 g of white wine vinegar or a tablespoon of mustard instead of an egg yolk.
