Cake of the Kings: the recipe for the traditional Epiphany cake

The kings cakealso known as king cake, is a typical French dessert to be served on January 5, Epiphany Day. It’s a cake puff pastry filled with cream and pastry cream.

Traditionally, a gift for the recipient of the dessert is inserted in the center of the dough, but you can also decide not to insert it.

Here’s how to do it in minutes.

Come prepare the galette des rois

Mix the butter with the icing sugar, the egg, the flour 00 and the almond flour.

Whisk the egg yolks with the vanilla extract, sugar and flour.

Pour the milk into the saucepan and strain the mixture. Stir over the heat until a creamy and compact mixture is obtained.

Combine the two creams and mix well.

Make two circles of puff pastry. Brush the yolk and milk around the edge of the first circle and spread the cream in the centre. Cover with the second sheet and secure all around by making slits with a knife.

Turn the cake over and brush it with the mixture of egg yolks and milk. Using a bowl, lightly cut out arcs.

Bake at 180°C for 25 minutes.

Tips

Use the milk of your choice, even without lactose.

The cake should be stored in the refrigerator and consumed within 3 days of preparation, as it is made with cream and milk.
