Canapè: the recipe for delicious mignons, ideal for buffets

To make them at home, just cut pansquare with the special molds (here we used those in the shape of a star and a flower) then stuff it with countless savory ingredients of your choice. We opted for two different versions, both seasoned with a Fcream cheese spreadable with chives: the first based on smoked salmon, lemon zest and grilled courgettes, the second based on prosciutto terracottadouble layer of cheese and 1/2 slice of zucchini as garnish.
The result will be refined and scenographic mignonettes, good to eat and beautiful to look at, perfect for a aperitif birthday or for brunch of Sunday.

Tips and variations
Usually the canapes are made with sandwich bread, as in our recipe, but nothing prevents you from letting your imagination run wild and replacing it with Rye breadcrackers, polenta discs, scones, mini bruschetta or other base of your choice.
If you wish, you can customize the mini sofas in different ways. Instead of Philadelphia-type cream cheese, you can use ricotta, mascarpone, salted butter, mortadella, mayonnaise, classic or avocado mousse… But also a shrimp cream obtained by mixing shellfish previously shelled and sautéed in a frying pan with oil and garlic, with a little robiola, a pinch of salt and pepper and a few leaves of fresh basil.
When it comes to garnishes, you’ll be spoiled for choice: you can use bresaolaarugula and parmesan flakes, marinated pickles and sliced black olives, slices of rolled salami, raw ham and piccadilly, tuna fillets in drained oil or swordfish carpaccio, and much more.
We suggest assembling canapes shortly before guests arrive to preserve their aesthetic appeal and flavor. But, if you need anticipate the timesjust cover them with a slightly damp cloth to prevent them from air drying.
