Canederli in broth: the Tyrolean recipe to enjoy in cold weather

I Dumplings I am a first course typical of the kitchen Trentino Alto Adigand, ideal to prepare during the cold season. It is Gnocchi based on stale breadsoaked in latte and mixed with egg, herbs and a stir fry speck and onion. The meatballs will then be cooked in a meat broth and eaten hot. The name of the dish comes from the German word Dumplingswhich refers to the large size of the dumplings.

How to make dumplings in broth

Cut the speck and the onion into cubes.

Melt the butter in the pan and sauté the onion and speck. Remove from fire.

Cut the bread into small pieces and mix it with the eggs, onion, speck, chopped chives and milk.

Make meatballs and cook them in meat broth.

Serve meatballs with more hot broth.

storage

You can keep the meatballs raw and cooked in the fridge for 2 daysinside an airtight container.
