Celery pesto: the delicate and creamy sauce recipe

Il celery pesto it’s a seasoning simple and tasty ready in just 5 minutes. A salsa delicate and creamy based on celery (ribs and leaves), almonds, grated parmesan, garlic, oil and fresh basil, perfect to enrich summer pastas and risottos, or to spread on canapes and slices of toasted bread to be served at lunchtime.aperitif. A variant of the classic Ligurian recipe, it is prepared by blending all the ingredients in the jug of a mixer with a pinch of salt and pepper, to obtain a mixture with a smooth and velvety texture.

Once ready, after a short rest, it can be used immediately or stored in the fridge for a few days, in sterilized glass jars and covered with a drizzle of oil. Perfect for a plate of spaghetti of the last moment or as an extra ingredient in lasagna and rustic pies, pesto is also a smart idea anti waste to recycle excess celery. If you wish, you can use grated pecorino cheese instead of parmesan or replace the almonds with other dried fruit of your choice: pine nuts, cashews, macadamia nuts …

Diuretic, purifying and rich in mineral salts, celery lends itself to many different uses in the kitchen. How to prepare celery pesto

Clean the celery, cut it into pieces and soak it for at least 15 minutes in a bowl with cold water 1 to eliminate all impurities.

After the time has elapsed, drain the celery, rinse it under running water and dry it thoroughly with a clean cloth 2.

Cut the celery into small pieces, transfer them to a mixing bowl and add the peeled garlic clove 3.

Blend everything well until you get a creamy mixture 8. Once ready, transfer the pesto into a glass jar, pour very little oil on the surface and let it rest in the fridge, covered with a lid, for at least 20 minutes.

The celery pesto can be kept in the fridge, in airtight glass jars and covered with a drizzle of oil, to 3-4 days massimo.
