THE chat in the oven I am here crunchy version and lighter than the classic carnival chiacchiere. In fact, the traditional recipe calls for the pasta sheets to be fried in abundant boiling oil, whereas here they are placed in a pan and then baked in the oven until they turn golden and crumbly. Despite this difference, the taste remains the same as the original ones: try to believe it.

The ingredients needed to make them are simple and often at hand, i.e. flour, eggs, butter, vanilla essence, a drop of liqueur – in our case dark rum – sugar and a pinch of yeast chemical. Once a homogeneous loaf is formed, it is rolled out with the appropriate pasta machine and then many rectangles are cut with the notched wheel.

Crispy, lightly toasted and delicious, the baked chiacchiere are finally sprinkled with icing sugar, ready to be eaten end of mealfor a special snack or on the occasion of a small party themed with other typical specialties of the time.

If you prefer, you can replace the rum with what you have at home: grappa, marsala, witch and amaretto are particularly suitable.

How to make a Chiacchière in the oven

Collect the flour mixed with yeast and sugar in the bowl of the planetary mixer, add the vanilla essence 1then incorporate the beaten egg with the yolks, the rum, the salt and the butter, working everything together with the leaf.

When you got a lumpy mixture, remove it from the blender 2.

Work it briefly on a work surface and form a homogeneous stick 3.

Take a portion of dough, flatten it slightly with a rolling pin 4 then roll it out with the pasta machine until you get a thin strip.

Trim rough edges with a toothed wheel 5.

Then cut out rectangles and engrave them in the center, forming two oblique lines 6.

Arrange the chatter obtained in two trays covered with parchment paper 7.

Bake in a preheated oven at 190°C for about 10 minutes, until golden brown. Then take it out 8 and let cool.

Sprinkle the chiacchiere with icing sugar and serve 9.
