Summer is coming; How about, then, preparing the Strawberry Cheesecake? This dessert does not need to be cooked, it is served cold and is made with seasonal fruit. In this variant of the classic cheesecake, the base is made with crumbled cookies, while the filling is made with cream cheese. The surface will be decorated with a strawberry topping.

Once ready, it can be served with a whipped cream puff pastry or homemade whipped cream.

How to make strawberry cheesecake

Crumble the cookies and put them in a bowl. Add the melted butter and mix until you get a sandy dough.

Line the circular mold (20 cm in diameter) with parchment paper and pour in the biscuit mixture. Mash it well with a spoon to compact the base. Let cool in the fridge.

In another bowl, mix the cream cheese with the sugar and the zest of 1 lemon using an electric mixer.

Dissolve the gelatin in 40ml of hot water and add it to the cream. Pour in the cream and keep stirring to assemble the cream.

Pour it into the pan and level it. Leave it in the fridge for 2 hours.

Meanwhile prepare the strawberry topping: Put the fresh strawberries in a saucepan, add the sugar and cook until softened. Use the hand mixer to compact everything into a smooth mixture. Add 4 sheets of wet gelatin and let it dissolve.

Pour the topping over the cheesecake and put it back in the fridge for 3-4 hours.

Advice

If you want, you can also add some mint as a decoration.

storage

Store leftover cheesecake in the fridge – it will keep intact for about 3-4 days.
