Extra virgin olive oil

The cialleddaalso called acquasale, is a typical dish of peasant tradition, very common in Puglia and Basilicata, especially in Matera. An inexpensive and quick dish, with a rustic and classic flavor. In our recipe, we prepare the cold wafer, also called “reaper’s breakfast”: ideal for the summer season, it is prepared with stale bread, tomatoes, red onion and oregano in the basic version, but can be enriched with cucumbers or carousels, olives and celery. Nutritious and authentic, it can be served as antipasti oh single dish supplement with a protein source of your choice, such as fish, cheese or hard-boiled eggs.

In addition to the cold version, there is also the hot sausage, a dish usually prepared on winter evenings using stale bread and seasonal vegetables, such as turnip greens, but also onions and potatoes. For the preparation of the wafer, it is preferable to use the Altamura Bread where from Matera: the first is characterized by a dark and crispy crust, the second by a more compact and fragrant dough. You can add any tomatoes you prefer, provided they are firm and at the right degree of ripeness, and olives, preferably the bitter ones also called Taranto or Matera olives.

You can leave the Red onion in slices soaked in cold water about ten: in this way, it will be more digestible. If you wish, you can also add other herbs, such as basil, mint or parsley.

How to prepare the wafer

Cut the stale bread into slices about 3 cm thick 1.

Then cut it into pieces 2.

Pour some water in a deep plate and add the bread 3. Let it soak in cold water for about ten minutes.

After the soaking time, squeeze it gently and place it in a bowl 4.

Wash the tomatoes and cut them into quarters 5.

Carefully wash the cucumbers, hull them and cut them into slices 6. If you prefer, you can also leave the skin on.

Peel the onion and chop finely seven.

Combine all the ingredients in a bowl and season with a pinch of salt 8.

Perfume to taste with oregano 9.

Pour a drizzle of extra virgin olive oil ten and mix gently.

You can serve the waffle for now 11 or let it rest in the refrigerator for half an hour: it will be all the tastier.
