Clouds of eggs: the recipe for the simple and original second course

The clouds of eggs they are a simple and original second course to be prepared instead of the classic bull’s-eye eggs; it is a slightly different way of serving eggs: a soft base of egg white whipped until stiff on which the creamy yolk: they will appeal to young and old alike. In our recipe we have also added some grated cheesebefore the baking in the oven for 5 minutes, but you can enrich the preparation only by adding herbs e spices such as chives, parsley, basil, paprika, turmeric or chili.

You can also make egg clouds for the Breakfast or for the brunchperhaps to be served on slices of toasted bread. If, on the other hand, you decide to serve them as a main course, accompany them with a salad or seasonal vegetables.

In our recipe we have left i soft yolksperfect for the shoe but, if you prefer them more cookedjust cook the piles of egg white in the oven for 3 minutes, then add the egg yolks and continue for another 4 minutes, approximately.

You can also use one for cooking no stick pan greased with oil that can go in the oven.

How to make egg clouds

Separate the egg yolks and whites. Beat the egg whites until stiff with an electric whisk 1.

Spread half the egg whites on the baking sheet and form two piles 2.

Make a hole in the center of each pile to make room for the yolks. Pour an egg yolk on each cloud of egg white 3.

Spread the grated cheese on the white part of the eggs and season with salt and pepper 4. Bake at 180 ° C for 5 minutes.

The egg clouds are ready to be served 5.
