A simple and quick preparation, perfect for a fish lunch or dinner with family or friends: the cod fillets are first browned in a frying pan with oil and garlic, drizzled with white wine and then cooked with tomato sauce, black olives, parsley and desalted capers. The result is a nutritious and light dish, to be completed with a side dish of vegetables and a few slices of homemade bread: the shoe, in fact, is a must.

For best results, we recommend purchasing Cod fillets very cool; alternatively you can also use frozen, preferring i hearts: thick enough, they will not collapse easily when cooked. If the season allows it, you can replace the tomato puree with fresh cherry tomatoes and flavor the dish with fresh basil or thyme leaves. How to prepare cod alla livornese

Rinse the capers under running water to desalinate them. Heat a little oil in a non-stick pan, add the garlic clove 1 and cook for a minute.
