THE fried duchessines they are perfect to serve as an aperitif.

Simple in the dough, based on potatoes, their strong point is the cheese sauce, which gives them a special flavor. It’s the fried version of the classic duchess potatoes, made in the oven.

Perfect served still hot, they are always very good even cold. There are few steps involved in making them, and after letting the potatoes rest, this recipe will only take a few minutes to complete.

How to prepare fried duchessine

Peel and cut the potatoes with a mandolin into thin slices. Wash them well with water.

Drain the water and toss the potatoes with the salt and cornstarch. Let stand 30 minutes.

Melt the butter in the pan and sauté the minced garlic for 30 seconds. Add the flour, mix and pour in the milk. Season with paprika and salt.

Stir over the heat and bring to a boil, at this point add and mix the cheese.

Shape the potatoes into balls and squeeze out the excess water.

Fry them in hot oil until golden brown. When they are ready, serve them with the sauce.

Advice

If you don’t like overly spicy flavors, do without paprika.

storage

If placed in an airtight container, the duchessine will keep for about 3-4 days.
