Focaccia without yeast: the easy and quick focaccia recipe

The focaccia without yeast is a simple and tasty bakery product, the fast variant classic high and soft focaccia. Perfect if you are in a hurry or have unexpected guests, it will solve any lunch or dinner with family or friends. It is prepared by mixing flour with water, extra virgin olive oil and salt; once the homogeneous paste has been formed, it is spread in a frying pan, seasoned with fresh rosemary, coarse salt and another round of oil, then baked. The result is a kind of crispy flatbread and irresistible, ideal to serve as a starter or as an aperitif with charcuterie, cheeses and pickles.

You can enjoy it as an alternative to bread, to accompany any second course or vegetable side dish, or stuff it with ingredients you prefer and consume it for a picnic in the park, a night out on the town or a meal at the office. A delicious recipe and always a winner, great if you have yeast intolerant guests too. You can garnish it with cooked ham and mozzarella, cherry tomatoes, olives and grated ricotta cheese, grilled zucchini and smoked provola, to obtain an always different focaccia.

How to prepare focaccia without yeast

Put the flour in a bowl and add a teaspoon of salt 1.

Pour the water on it 2.

Add two tablespoons of oil 3.

Mix everything well with a whisk 4.

Then mix with your hands until you get a homogeneous mixture. 5.

Transfer the dough to a surface dusted with flour and form a loaf by compacting it with your hands 6.

Spread the dough in a well greased mold about 28 cm in diameter and adapt it evenly to the surface seven.

Use your fingertips to create dimples in the dough 8.

Pour over a drizzle of oil 9.

Add a few rosemary needles and sprinkle with coarse salt tenthen bake at 200°C for 20 minutes.

After the cooking time, take the focaccia out of the oven and serve it hot 11.


Yeast-free focaccia can be stored in the refrigerator, covered with cling film, to 1-2 days. It can be frozen both raw and cooked.
