How to make fried squid with lemon mayonnaise and parsley
Prepare the lemon and parsley mayonnaise, reduce the lemon juice with the sugar in a saucepan, then cool the mixture.
Put an egg, 200 g of oil, salt, pepper, lemon reduction and parsley in a bowl, whisk everything, if it’s too thick, you can add a drop of water.
Clean the squid and cut them into rings about 1.5 cm wide.
Pass them through the mixture of flour 0 and re-milled durum wheat flour, then pass them through a sieve to remove the excess flour.
Fry them in oil at 180°C until they are golden, drain them and wipe them on absorbent paper.
Your fried calamari is ready to be served with a lemon and parsley mayonnaise.
