Garlic in oil: the recipe for a simple and appetizing preserve

L’garlic in oil it’s a conserva useful and appetizing, a very simple recipe that will be useful to you on many occasions. You can use flavored oil as a condiment and garlic for enrich second coursesper season bruschetta or to be enjoyed as a fanciful one antipasto: garlic in oil, in fact, is very digestible and has a really pleasant taste. To make it, we cleaned the garlic heads and left the cloves to soak in water and salt for half an hour. The garlic will then be boiled for a few minutes, before being placed in the glass jars sterilized with laurel, peppermint, basil e extra virgin olive oil: of course you can flavor the garlic in oil with the aromas you prefer. The jars will then be boiled in water to seal them. Here are the steps to make it happen.

How to prepare garlic in oil

Peel the garlic heads 1get the wedges and clean them well 2. Leave the wedges to soak in water with 1 tablespoon of salt for 30 minutes 3.

Fill a saucepan with vinegar, add 2 tablespoons of salt, the garlic cloves and boil for 5 minutes 4. Dry them in kitchen paper 5. Fill the glass jars with the bay leaves and some of the garlic 6.

Also add the peppermint and basil (7), add the rest of the garlic and cover with the extra virgin olive oil (8).
Close them with the lid (9).

Boil the jars in water for about 20 minutes 10 and gently lift them with kitchen tongs 11. Let them cool upside down and check if the vacuum has been done correctly: if the lid is slightly concave and pressing the center you do not hear “click clack” the jar is vacuum packed. The garlic in oil is ready to be preserved 12.


You can store garlic in oil in the pantry for 4-5 months. Once the jar is open, keep it in the refrigerator tightly closed for a few days.
