Grilled chicken: the recipe for a tender and juicy second course

Il grilled chicken it’s a second dish light and fast, ready in minutes. The preparation really is simple: but it is important to follow some advice, especially regarding the cooking, in order to make a soft and succulent grilled chicken breast, avoiding to prepare a dry and stringy dish. It is a simple, healthy and light dish, ideal for the whole family, both for those who want to contain a little calories, but also for children and the elderly: it is an easily digestible dish.

In our recipe, the chicken breast will be marinade in an emulsion of oil, lemon juice, garlic and rosemary: in this way the carne will result soft and fragrant. You can also use grilled chicken to make a delicious chicken salad or you can prepare a tasty chicken sandwich, for a quick and tasty lunch. If you prefer you can accompany the grilled chicken with one vinaigrette made with 3 tablespoons of extra virgin olive oil, 1 tablespoon of balsamic vinegar, salt and pepper: mix and pour the dressing over the chicken breast before enjoying it, accompanied by a fresh salad or grilled vegetables. Here’s how to prepare it exquisite in no time.

How to prepare grilled chicken

Pour about 6 tablespoons of extra virgin olive oil into a small bowl 1.

Add the lemon juice 2.

Season with salt and black pepper 3.

Combine the chopped rosemary 4.

Mix with a teaspoon to even out 5.

Place the chicken slices on a plate 6.

Pour the previously prepared emulsion 7.

Cover the chicken with cling film and let it marinate in the refrigerator for about 30 minutes 8.

Place the chicken breast on the pre-heated grill and wait for the side facing up to become light. Now flip the chicken over to the other side and cook for 3-4 minutes 9.

Per the marinade, you can replace the rosemary with thyme or with the aromatic herb you prefer; eventually you can also add a little hot pepper or strong paprika, so as to give one spicy note. If you want avoid marinatingyou can make the grilled chicken softer by brushing it with a sprig of rosemary dipped in oilbefore placing it on the hot plate.

Place the chicken breast slices on the oil-free grill, the marinade will do the rest; just dust on the surface of the a little bit of saltas in our recipe: a trick so that the chicken breast does not stick to the plate. It is also important to place only two slices on the plate at a time: cooking too many together can cause the temperature of the plate, not allowing the chicken breast to cook perfectly.


Grilled chicken should be enjoyed hot on the spot. Alternatively, you can store it in an airtight container in the refrigerator for up to 1 day.
