A very simple recipe that will allow you to prepare a good seafood dish in a few simple steps without having to turn on the oven. Once the fish has been flavored with an emulsion based on lemon juice, extra virgin olive oil, garlic and chopped aromatic herbs, it is cooked on a hot plate for about ten minutes, turned gently, brushed again with the marinade and then cooked: the result will be a according to delicious, with tender and delicate meats, also ideal for those who follow a healthy and low-calorie diet but do not want to give up taste.

Before grilling the sea bass, it will need to be cleaned and gutted, but to reduce preparation time you can ask your trusted fishmonger for help. Buy fish very fresh, with a good smell of the sea, bright eyes, firm and elastic meats and, possibly, not farmed but fished in the open sea. Once cooked, you can accompany the sea bass with a portion of potatoes, a mixed salad or some vegetables au gratin.

Rich in omega-3 and low in fat, sea bass can be prepared in many different ways. You can cook it in a pan with crazy water, with chopped cherry tomatoes, garlic and white wine, in the oven, in a salt crust or in foil, or on the occasion of a summer barbecue with friends, you can roast it on the barbecue: in this case remember to insert it inside the special grill and cook it away from the embers without depriving it of scales.

How to prepare grilled sea bass

Squeeze the lemon 1 and filter the juice.

Add the extra virgin olive oil 2.

Clean the fish. With a sharp knife, make a cut along the belly and remove the entrails 4.

Brush the inside and outside of the fish 7 with the prepared marinade. Wrap it in cling film and let it rest in the fridge for about 20 minutes.

After the resting time, arrange the sea bass on a hot plate 8 and let it cook for about ten minutes.

Gently flip the fish to the other side, brush it again with the marinade 9and continue cooking for another 10 minutes.

When cooked, place the sea bass in a serving dish, on a bed of salad and cherry tomatoes, and serve with a few lemon wedges. 10.


Grilled sea bass should preferably be enjoyed hot at the moment. Alternatively, you can store it in the fridge, in an airtight container, for 1 day.
