I’Irish stew is a Lamb stew and potatoes typical of the culinary tradition Irish. A tasty and fragrant dish prepared especially for the feast of Saint Patrickexcellent if accompanied by a pint of ice-cold beer, as tradition dictates.

How to make an Irish stew

Start by preparing the meat broth that will be used for cooking. Clean the lamb, separating the bones from the pulp which should be reserved. Clean the carrots, onion and celery stick. Mix the vegetables in a pot, the lamb bones and cover with 2 liters of water. Season with salt, pepper, a drizzle of extra virgin olive oil and a few bay leaves. Bring to a boil and cook the broth for about an hour. 1then filter it and keep it aside.

Once the broth is ready, move on to making the Irish stew. Peel the potatoes and cut them into cubes, then slice the carrots 2.

Peel and finely chop an onion 3.

Cut the previously reserved lamb meat into cubes of about 2-3 cm, then lightly flour everything 4.

In a large pan, heat a drizzle of extra virgin olive oil, add the floured lamb bites and let them brown for 2-3 minutes 5.

Mix carrots and onion, then add salt and pepper. Stir and cook for about 5 minutes before covering everything with the strained meat broth 6.

Cover the pan with a lid and cook the stew over medium heat for about 40-50 minutes. Then add the diced potatoes, cover again with the lid and allow the Irish stew to cook for another 50-60 minutes 7.

When the time is up, turn off the heat and serve the Irish Stew with a sprinkle of chopped parsley 8 and a mug of cold beer.


If you don’t have a piece of bone-in lamb on hand, you can prepare a classic beef broth.

You can also use red potatoes with white potatoes.

If you prefer a stronger taste, deglaze the bites with white wine or beer before adding the broth.


It is advisable to consume Irish Stew immediately so as not to lose the creamy texture and flavor of this mouth-watering stew. However, you can store it in the fridge for about 3-4 dayssealed in an airtight container.
