Korean cucumbers: the simple and delicious side dish recipe

L’Korean style cucumber salad is a delicious, fast and tasty side dish, topped with a typically Asian marinade: an original way to serve the classic cucumber salad.

To prepare it, you need a few ingredients, easily available in Asian markets or in the most well-stocked supermarkets: soy sauce, Sesame seeds, rice oil, chilli oil, sugar, sale e garlic.

The peculiarity of this dish consists precisely in spicy tasteconferred by the pepper oil, also replaceable with korean chilisaid Gochugaru.

How to make Korean cucumber salad

Score the cucumbers with diagonal cuts, on both sides, using two long toothpicks 1. Cut them in half, put them in a bowl and sprinkle them with salt 2. Let the cucumbers sit for 5 minutes. Pour the water over the cucumbers and wash them thoroughly 3.

In a separate bowl, mix the soy sauce, salt, sugar, rice oil, chili oil, and sesame seeds 4. Pour the dressing over the cucumbers 5. Let the cucumbers flavor well, mixing with your hands, and serve 6.


Korean cucumber salad can be preserved in the fridge for 2-3 daysclosed in an airtight container or covered with cling film.
