Leftover biscuit cake: the fluffy recycled cake with only three ingredients

The leftover cookie cake is a perfect dessert for recycling dry biscuits that have been in the pantry for a while or the crumbled ones that accumulate at the bottom of the package. Very easy to prepare, it is made with only three ingredients: in fact, just blend your biscotti favorites and add latte e baking powder to obtain a cake in a few minutes fluffy and tasty to cook in the oven, perfect for Breakfast o to snack.

The recipe is unsweetened because the cookies already contain some inside them, but if you prefer you can add the sweetener you like best, without exaggerating. To make it even more delicious we have added hazelnut cream e chopped hazelnuts on the surface, but the cake is also excellent with a simple sprinkling of powdered sugar. To prepare it you can use any type of biscuit: simple shortbread, cocoa, wholemeal, or with dried fruit inside, the cake will be excellent in any case. Let’s see together how to prepare it.

How to make a leftover cookie cake

Blend the cookies in a blender, then put them in a bowl and add the milk and baking powder 1. Mix the ingredients with a spatula, pour the mixture into a 24 cm diameter cake pan and bake at 180 ° C for 25 minutes. Let it cool, then decorate with hazelnut cream 2 and chopped hazelnuts and serve 3.
