Olive crumble: the simple recipe to give crunch to dishes

If you want to make a special first or second course, the olive crumble is the right preparation, made for us by Chef Michele Ghedini for the Address Book Easy Gourmet. Crumble in English it means “crumb”; the olives, in fact, will be reduced to crumbs, ready to be crunch to your dishes. In our recipe we made the crumble with the olives in oilwho will be microwaved for a few minutes, until they become crispy. The olives will then be chopped, ready to be used as crispy topping. In this preparation we used the olive crumble to flavor a dish ofspaghettiwith the addition of anchovies in oil. A simple but refined recipe for every occasion.

You can also use the olive crumble to enrich a pumpkin risotto, fried cod or any dish of your choice.

Pitted olives in oil

Extra virgin olive oil

How to prepare the olive crumble

Drain the olives from the oil with a colander 1dab it with paper towels 2 and place them on a sheet of parchment paper. 3.

Put in the microwave for about 5 minutes, they will become very crispy 4. Let them cool and chop them well 5. Your olive crumble is ready 6.

Prepare the spaghetti with the garlic, oil, anchovies and olives, throw the spaghetti in the water, brown the garlic in the oil, add the anchovies seven and let them melt. Drain the spaghetti halfway through cooking and finish cooking in the pan 8. Serve, sprinkling the spaghetti with the olive crumble and a few cut anchovy fillets. Your dish is ready to be tasted 9.
