The Onion soup it is a typical first course of the French cuisine with onions, a simple and hearty recipe made for us by Chef Michele Ghedini for the Address Book Easy Gourmet. It’s a recipe for peasant origins, made with onions that will be thinly sliced, simmered in a pan with extra virgin olive oil, butter and bay leaf then cooked long and gently with the addition of hot brothfor a creamy result. At the end of the preparation it will be served in clay bowls and accompanied by crispy bread crispy, sprinkled with Gruyere. Here are the steps to make it.

How to make onion soup

Peel and finely chop the onions, then brown them in a pot with butter, oil and bay leaf.

Salt lightly and cook for 20 minutes, if you wish you can also add a pinch of pepper.

When the onions are golden add the flour and leave to grill.

Continue cooking, gradually pouring in the hot meat broth.

Continue until the onions are flaky and the soup is creamy, about 30 minutes.

Cut the bread and toast it for about 10 minutes (depending on the size) in the oven at 180°C.

Now put the soup in a bowl, place the slice of bread and sprinkle it with Gruyere cheese. Bake at 200°C for 10 minutes.

You can store the onion soup in the fridge for 1-2 daysinside an airtight container.
