Pan-fried mushrooms: the simple recipe for a light and fragrant side dish

For this recipe, we chose i oyster mushrooms: generally cultivated, they are characterized by the wide and flat dimensions of the umbrella and a very delicate taste; if you prefer, you can use mushrooms, chanterelles or, if you like strong and decisive flavors, even porcini mushrooms. Ideal duringAutumn, the quintessential mushroom season, you can prepare them at other times of the year using farmed or frozen ones. In our recipe, we sautéed them in a pan with extra virgin olive oil, garlic, rosemary, salt and pepper, for a final result fragrant and tasty.

Mushrooms should never be washed in water, but after cutting off any earthy stems or damaged parts, yes rub gently with a damp cloth.

How to prepare mushrooms in a pan

Arrange the fresh mushrooms on a cutting board 1.

Carefully loosen the mushrooms to separate them from each other 2.

Cut the stems and remove any earthy or damaged parts 3.

Gently wipe the mushrooms with a damp cotton cloth 4.

Cut the mushrooms into thin slices 5.

In a non-stick pan, heat the extra virgin olive oil 6.

Add poached garlic seven.

Perfume with sprigs of rosemary 8. Heat over low heat without frying the garlic.

Mix the mushrooms 9.

Tips

To give a stronger and spicier flavor to the mushrooms in the pan, you can add a little chilli pepper.

Those who prefer can use the parsley instead of rosemary: in this case add it almost at the end of cooking.

If you use i frozen mushroomsconsider doubling the weight as they tend to shrink during cooking.

To make them even tastier, you can enrich them with a few slices of cheesecut them finely: put them almost at the end of cooking and continue until they are well melted.

Pan-fried mushrooms can be stored 2 days in the refrigerator, closed in a special airtight container.
