Pan-fried zucchini rolls: the quick and easy recipe

The courgette rolls in a pan I’m a antipasto quick and tasty, to be prepared instead of the classic baked rolls, excellent to serve also as vegetarian main course. In this recipe we cut the courgette into thin slices, before cooking them in a pan and stuffing them with cheese racy. Once the rolls are made, they will be cooked in the pan con tomato sauce and served with fresh basil. You can enrich the filling with del baked hamif you prefer, or make the filling with ricotta mixed with egg and parmesan instead of the piece of cheese. Here’s how to make them in a few simple steps.

How to prepare zucchini rolls in a pan

Cut the two ends of the courgette 1.

Slice the courgette thinly, making slices about 2 mm thick 2.

Heat some oil in the pan and cook the courgette slices for 2 minutes on both sides 3. Put them on a plate.

Cut the cheese into rectangles as wide as the courgette slices 4.

Wrap a piece of cheese in each slice of courgette 5.

In another saucepan pour the tomato sauce and season it with the salt and pepper 6.

Put the courgette rolls in the sauce 7cover with the lid and cook for 7-9 minutes or until the cheese melts.

Serve the zucchini rolls in a pan with the basil leaves 8.


You can store the zucchini rolls in the pan in the refrigerator for 1-2 daysinside an airtight container.
