Patatas bravas: the original Spanish recipe

The spicy potatoes I’m a typical spanish dish well known: tapasthat is snacks based on potatoes fried in seed oil and seasoned with a spicy sauce based on garlic, tomato sauce, vinegar and paprika. The name “bravas” in Italian means “wild” and refers to the very spicy sauce that accompanies them. They are served both hot and cold in every bar and restaurant in Spain, especially in Madrid, where they are the typical aperitif snack, along with tortillas and croquetas. The proportions of the spices contained in our sauce reproduce the spiciness of original Spanish recipebut if they are too spicy for you, adjust the doses to your taste.

How to make patatas bravas

Wash and peel the potatoes 1cut them into pieces of about 2 cm: the more homogeneous they are, the more homogeneous the cooking will be 2. Bring the water in the pot to a boil and add the bay leaf, cumin, paprika and salt, then add the diced potatoes: inserting the spices directly into the pot will allow the potatoes to better absorb the aromas 3.

Cook for 5 minutes 4 e scolale 5. Bring the seed oil to a boil and fry the potatoes until a not too dark external crust forms; mix it a few times 6.

Remove the potatoes from the oil with a slotted spoon and let them dry on a paper towel 7. Prepare the seasoning powder by pouring the salt, black pepper, paprika and chipotle into a small bowl 8. Sprinkle the still warm potatoes 9.

Stir quickly to distribute the powder well 10, then move on to preparing the bravas sauce. In a blender, mix the garlic, chipotle, cayenne pepper, paprika, and tomato paste 11then blend everything 12.

Add the mayonnaise 13 and red wine vinegar 14blending the mixture once more 15.

In the end you will need to get a smooth cream, not too thick nor too liquid 16. Plate the bravas potatoes, pour the sauce 17 and complete the dish with chopped parsley 18.

storage

Patatas bravas can be stored for a couple of days in the refrigerator, closed in an airtight container.
