The recipe calls for one double lift: the first, longer and about 2 hours, and the second, a little shorter and directly in the pan: for a very bubbling and very digestible dough. For this preparation, we used the beer yeast fresco but, if you prefer, to take advantage of the times, you can replace it at will with the dehydrated one: to be mixed directly with the powders without requiring any activation.

For an impeccable result, do not forget to drain the mozzarella well from the whey and to drain the more before adding it to the rest of the ingredients. If you wish, you can replace the cooked ham with the turkey breast or with a more delicious mortadella or you can use hard-boiled egg yolk instead of pre-cooked cereal, to crumble over the pizza once out of the oven.

For a creamier result, you can distribute a drop of cooking cream or, to prevent the pizza from being too dry, you can cook it like a focaccia and only season it shortly before the end of cooking.

How to prepare a mimosa pizza

Dissolve brewer’s yeast in lukewarm water 1.

Sift the flour into a bowl and add the dissolved yeast 2.

Add the extra virgin olive oil and roughly mix the ingredients with a spatula 3. Then add the salt and continue working for a few seconds.

Return the dough obtained to a work surface and continue kneading with your hands 4 for at least 15 minutes.

Once you get a smooth and consistent stick 5transfer it to a bowl and let it rise, covered with transparent film, for at least two hours or until it doubles in size.

Once the time has elapsed, divide the dough into two equal parts and place each part in a 24 cm diameter pizza pan. 6lightly oiled.

Leave to rest for 15 minutes, then stuff the bottom with mozzarella 7squeezed and cut into cubes.

Drizzle with oil and add the slices of cooked ham 8.

Complete with drained pre-cooked corn 9.

Drizzle with another drizzle of oil ten and let rise another 45 minutes. Then put the pizza in the oven, in ventilated mode, and cook for 15 minutes, covered with aluminum foil, to prevent it from drying out.

Then remove the foil and continue cooking for 10 minutes: taking care, at the last moment, to place the pizza under the broiler. At the end, take the mimosa pizza out of the oven and place it on a cutting board. 11 and serve well.
