Potato flan: the recipe for a delicious and stringy single dish

Lo potato flan it is a rich and very tasty dish. Perfect for the Sunday lunch or for an informal evening with friends, it is prepared with boiled potatoes, eggs, milk, butter, grated parmesan, smoked cheese and diced cooked ham. Once the potatoes have been reduced to a puree, they are mixed with the rest of the ingredients, transferred to a baking dish, sprinkled with breadcrumbs and then cooked in the oven: the result will be a single dishsoft and racywith a sweet tooth crispy crust on the surface

When buying, be careful to choose the right variety of potatoes: apparently all similar, they vary in texture, flavor and cooking resistance. For this preparation we suggest the floury and dry ones a yellow flesh which, thanks to the high percentage of starch, will tend to flake, lending themselves perfectly to being reduced to a puree.

How to make potato flan

Wash the potatoes thoroughly, place them in a saucepan with cold water 1 and let them cook for half an hour starting from boiling, or until they are soft (you can check the cooking by piercing them with the prongs of a fork).

Once cooked, drain the potatoes, let them cool and peel them; then pass them to the potato masher and collect the puree in a bowl 2.

Pour in the milk 3.

Add the soft butter 4.

Combine the eggs 5.

Add the grated Parmesan 6.

And season with salt and pepper 7.

Stir vigorously 8 until a homogeneous mixture is obtained.

Combine the diced ham 9.

After the cooking time, take the potato flan out of the oven 16 and let it rest for a few minutes.

The potato flan should be kept in the refrigerator, in a special airtight container, for 2-3 days massimo.
