Quinoa burger: the recipe for a vegan and gluten-free dish

I quinoa burger i am a foodie vegan variant classic meat burgers. Quick and easy to prepare, they are perfect for everything lunch oh family dinner, so tasty that even the little ones in the house will enjoy them. Plus, quinoa is gluten-free, so if you’re celiac or intolerant, it’s fine for you. For our recipe we used zucchini, carrots, potatoes and onion which, once boiled, are mixed with cooked quinoa. The burgers are formed with a pastry ring and then pan-fried with a drizzle of oil. Light and nutritious, they can be supplemented with a seasonal accompaniment or used to fill a sandwich, topped with a creamy mayonnaise or other sauce of your choice.

If you prefer, you can simmer the vegetables directly in the pan and cook the burgers in the oven at 180°C for about 20 minutes, or in any case until lightly golden. You can add the vegetables you prefer, even depending on the season, the aromatic herbs and spices you like, such as turmeric, ginger or mild curry. If the mixture is too soft, you can add a little breadcrumbs and, for a vegetarian versionyou can also incorporate an egg or grated cheese.

Naturally gluten free, quinoa is a pseudo-cereal with an excellent nutritional profile. Considered a good source of vegetable protein (it contains about 15 grams per 100 weighted raw product), it has a high content of lysine, an amino acid important for the absorption of calcium in the digestive tract and rich in phosphorus, potassium, iron and folic acid. A word of advice: before boiling it, rinse it thoroughly under cold running water to remove all traces of “saponin”, responsible for the bitter aftertaste.

How to make quinoa burgers

Wash the quinoa under cold running water using a colander 1.

Transfer the quinoa to a saucepan and pour enough water over it to cover it 2.

Put it on the fire, add a pinch of salt and let it boil for the time indicated on the package; at this time, drain the excess water and transfer the quinoa to a bowl 3.

Wash the vegetables and start cutting the zucchini and potatoes into pieces 4.

Next, also dice the carrots and onions until used up. 5.

Boil the vegetables in lightly salted water 6.

Once cooked, drain them and transfer them to a bowl seven.

Mash the vegetables with a fork 8.

Then chop the parsley 9.

Transfer the quinoa to the bowl with the vegetables and add the parsley ten.

Place an 8 cm diameter cookie cutter on a sheet of parchment paper and fill it with the quinoa mixture 12.

Then cook the burgers in a skillet with a drizzle of oil for about 3 minutes on each side or until golden brown.
