Rice dumplings: the recipe for Chinese dumplings seasoned with vegetables

THE rice balls are a typical preparation of Chinese cuisinemade for us by Chef Michele Ghedini; it’s dumplings oblong shape prepare with water and rice flourmix with wheat flour oh glutinous rice flour, as in our preparation. A different recipe from that of the gnocchi that we are used to eating: rice gnocchi, in fact, have a softer texturewhich characterizes them. Once the dough is made, you will need rest in the fridge, before forming a loaf that will be steamed for half an hour. After cooking, we will form the rice balls, ready to serve garnished with vegetables, Sesame oil e soya sauce; seasoning that you can vary by replacing the vegetables with shellfish or seafoodsuch as prawns, clams or mussels, or season them with pesto or tomato sauce, to customize them to your liking.

In a bowl, mix the rice flour and the glutinous rice flour, then gradually add the hot water 1 and knead with hands 2; when everything is mixed, close with transparent film 3 and let stand 30 minutes at room temperature.

After resting, give the dough a rectangular shape 4 and steam the dough for 20-30 minutes 5then cool it in water and ice 6.

When the mixture is cold, wet the blade of the knife 7 to make sure that the dough does not stick and cut slices of about half a centimeter 8; keep them in cold water 9.

Now prepare the sauce for the gnocchi: put the seed oil in a saucepan and add the carrots and zucchini cut into thin strips ten. After cooking for about 5 minutes, add the meatballs and season with soy sauce, salt, a drop of wine and sesame oil 11. Sauté them for a few minutes and they are ready to serve. 12.

storage

You can prepare the rice gnocchi in advance and store them in the refrigerator, on a flour-dusted tray, or you can freeze them: place them first on a well-spaced tray and then in freezer bags. Once cooked and seasoned, however, it is advisable to consume them immediately.
