He Robuchon puree is one of the most famous dishes of haute cuisine, not the classic mashed potatoes, but the recipe of starred chef Joël Robuchon. In this preparation, the boiled potatoes are mixed with lots of butter and milk, so as to obtain a very creamy and irresistible mash with a unique flavor: 500 grams of butter and 500 milliliters of milk are needed for each kilo of apples earthen. Once ready, serve it as an accompaniment to main courses of meat, fish or vegetarian dishes. Here’s how to prepare it step by step.

How to make Robuchon puree

Start by washing and cleaning the pate ratte, these have a particular taste, but if you can’t find any you can use tuscia potatoes or more floury potatoes in general: I advise you to choose them of the same size.

Now put them in a saucepan and cover them with cold water, for each liter of water put 10 g of coarse salt.

Bring to a boil and lower the heat, they should cook gently for about 25/30 minutes or until you can pierce them with a knife. If the potatoes are bigger, it will obviously take longer, around 40 min/1 hour.

Meanwhile, cut 500 g of butter into cubes and store in the freezer.

Now drain and peel them when hot, this is an important step.

Place the vegetable mill on a saucepan, cut the potatoes into pieces and mash them.

On low heat let the mixture dry and mix with a ladle.

Separately, simmer half a liter of milk. Begin to incorporate the butter, then gradually the milk.

As soon as it starts to soften, start using the whisk. Now, to make it super silky and creamy, pass it through a sieve several times. finally, the salt rule.

Tips

The mash should be served lukewarm, but if after sifting it the temperature is too cold, you can reheat it gently in a saucepan before serving.

You can store mashed potatoes in the refrigerator for 2-3 daysinside an airtight container. They warm up with a little milk, before enjoying it.
