Sausage and Beans it’s a second tasty and rustic, perfect for recharging and warming up during the winter season. A very consistent and invigorating recipe, made famous thanks to the film “They Call Me Trinity” with Bud Spencer and Terence Hill. Also known as Bud or Trinity beans, they are precisely reminiscent of a typical Tuscan specialty: all’uccelletto beans, in this case enriched with fresh sausage.

For its preparation, we start from dried beans which are soaked in water for at least 8 hours; after this time, they are boiled with the herbs and finally cooked with sautéed onions, tomato purée and fresh ham sausage, without the casing.

It is covered with the lid and left to cook for about half an hour: the result is a fragrant dish and with a full-bodied sauce, to be served with slices of homemade breadfreshly toasted and piping hot, with which to make the slipper.

you can use i pinto beans or both dry and pre-cooked cannellini beans, to speed up prep times, as long as you choose legumes preserved in glass jars.

How to make sausage and beans

Collect the beans in a large bowl and cover them with water 1then let them soak for at least 8 hours.

Rinse them well and transfer them to a saucepan covered with cold water with the garlic and bay leaves 2. Bring them to a boil and let them cook for an hour.

Peel and dice the onion, then brown it in a pan with a drizzle of oil 3.

Remove the casing from the sausage, place it in the pot 4 and brown it.

Deglaze with red wine 5.

Add the well-drained beans 6 and let it taste.

Add a pinch of salt and flavor with a grind of pepper and a sprig of parsley; pour the tomato puree 7then cook over low heat, covered, for about 30 minutes.

Serve the sausages and beans, topping up with a few fresh parsley leaves 8.

storage

You can store sausages and beans in the refrigerator, in a suitable airtight container, to 1-2 days. If you used fresh ingredients, you can also freeze the preparation.
