How to make shrimp dumplings

First, start by making the cannellini bean cream: brown the shallot in a saucepan 1then add the cannellini beans already cooked and the lemon juice 2. Add the water and cook for 20 minutes, then mix everything and season with salt and pepper. Pass the cream through a sieve to make it smooth 3.

Now move on to making the croquettes, clean the prawns 4 and chop them with a knife 5. Put them in a bowl and add salt, pepper, oil, egg white, cornstarch, chives and, if desired, even a boiled potato 6which will help you make the compound thicker, while the egg white will make it softer.

Mix everything well 7 and let it rest in the refrigerator for 30 minutes. Make the croquettes 8dip them in flour, then in egg and finally in panko or breadcrumbs 9.

Fry them in hot seed oil for about 5 minutes tendrain them on absorbent paper 11 and serve with the cream of beans 12.

To make them more crispy and appetizing, we have chosen to fry the prawn balls, but it is also possible to make the version cooked, lighter. In the latter case, they should be placed on a baking sheet covered with parchment paper, drizzled with a drizzle of olive oil and cooked in 200°C For about 15 minutes.

You can save the shrimp dumplings for 1 day iin the refrigerator, in an airtight container, but it is advisable to consume them immediately after preparation, to appreciate them at best.
