How to prepare lemon squares

Wash the lemons with the vinegar and baking soda, transfer them to the saucepan with water and boil 1.

Salt the lemons, put them in the water and rinse them well. Grate and squeeze the lemons to get the zest and juice 2.

Beat the egg yolks with the sugar. Add the lemon juice and zest, vanilla sugar, water 3 and mix.

Variants

Alternatively you can prepare the squares of ricotta and lemon, even softer. In a bowl, blend 3 eggs with the grated zest of one lemon. Gradually add 100 g of sugar, 100 ml of fresh liquid cream and 70 g of potato starch, always continuing to blend. Finally add 500 grams of ricotta and continue to mix. Pour the mixture into a rectangular pan covered with parchment paper, and cook at 180 ° C for about 40 minutes. Then serve with powdered sugar.

You can keep the lemon squares in the fridge for 2 days, inside an airtight container. If the icing is left over, you can keep it in the fridge for 2-3 days, covered with cling film.
