Start preparing the cookies by mixing the flour with the icing sugar 1. Meanwhile put the eggs to cook: cover the eggs in a pan of cold water and bring to the boil, then count 8 minutes before draining them and letting them cool.

Cut the cold butter into cubes and add it to the flour 2. Also grate the zest of a lemon and start mixing everything by hand, or with a planetary mixer.

Once the eggs have cooled, open them, remove the yolks and mash them with the tines of a fork, then add them to the rest of the batter 3.

Knead until you get a smooth and compact dough 4. Leave to rest in the refrigerator for at least 20 minutes.

Roll out the dough on a lightly floured work surface until you get a disc 1 cm thick. With a special cookie cutter, cut out 30 to 40 cookies 5, redistributing excess press clippings. Spread the biscuits on a baking tray lined with baking paper and bake in static mode at 170°C for 20 minutes.

Remove the cookies from the oven and let them cool on the baking sheet. Sprinkle the surface with a generous pinch of icing sugar and enjoy them with your loved ones 6.
