Tofu burger: the recipe for the light and tasty vegan second course

Il burger on tofu it’s a second dish really tasty and easy to prepare vegan. An excellent alternative to the classic meat burgers, perfect for those following a vegetable diet. Light and tasty, it is based on tofu, a food deriving from the processing of yellow soybeans, carrots, courgettes, a pinch of curry and breadcrumbs: genuine and rich in vegetable proteins, it is ideal to serve for any lunch or family dinner, accompanied by a mixed salad and a few slices of toast. To make it even more delicious, you can complement it with a vegan mayonnaise or a soy yogurt sauce.

The tofu burger can also be used as stuffing of a sandwich, a focaccia or a flatbread, complemented by sliced ​​salad, sliced ​​tomatoes and guacamole. For a gluten free version, you can replace the breadcrumbs with cornmeal or chickpea flour. You can cook your burgers in a pan with a drizzle of oil or, for an even lighter variant, in the oven at 180 ° C for about 20 minutes, or in any case until golden brown. If the mixture is not very compact, it is possible to add more breadcrumbs; if it is too dry, it can be adjusted with a spoonful of extra virgin olive oil.

If you like, you can add the vegetables you prefer, customizing your burgers also according to the season: in autumn try mushrooms, pumpkin and beetroot, in the warmer seasons, however, you can opt for fresh peas, aubergines or peppers. How to make the tofu burger

Wash and finely slice the shallot 1.

Pour a drizzle of oil into a pan, add the shallot 2 and brown it for a few minutes.

Clean the carrots and cut them into cubes 3.

Clean the courgettes and slice them into cubes the same size as the carrots 4.

Transfer the vegetables to the pan 5add another drizzle of oil and brown them.

Cook the vegetables and season with salt and pepper 6.

Blot the tofu with kitchen paper. Cut it into cubes 7 and let it rest for about ten minutes on a cutting board to drain the water. This step is important to avoid that the burgers are watery and not very compact.

Add the tofu to the vegetables 8.

Transfer the contents of the pan to a bowl and add the curry 10.

Pour in the breadcrumbs 11.

With an immersion blender create a homogeneous mixture 12.

Shape the burgers by placing the dough in a pastry ring approximately 8 cm in diameter 13.

For a variante lightyou can cook the tofu burgers in the oven at 180 ° C for about 10 minutes.

Instead of the shallot, you can use the spring onion or onion, add other vegetables (eg aubergines, spinach, peas) or flavor the burgers with olives, capers and dried tomatoes.

Burgers can be flavored with others spicessuch as paprika or turmeric, and perfume the dough with aromatic herbs such as basil, oregano, parsley, mint and, if you like, even a pinch of chilli.

Instead of burgers, you can make tofu balls, following the same procedure but forming some by hand small balls.


Once cooked, you can store the tofu burgers for 2 days in the refrigerator in a suitable airtight container. You can freeze them raw and store them in the freezer for at least a month.
