Tuna with sesame: the quick and easy fish main course recipe


fresh tuna fillets (about 700 gr)

Il tuna with sesame it’s a second course of fish easy and tasty, perfect for the summer season and any lunch or dinner with family and friends. Light and delicate, the tuna is passed in an emulsion based on extra virgin olive oil, lemon juice, salt and pepper, then blanched for a few minutes on a hot plate, so that it remains rosé to the heart and very tender when cut. To make the dish even more delicious, it is the breading with sesame seeds that give the right crunchiness and also a slightly aromatic and toasted aftertaste.

You can also add black sesame seeds, for a nice chromatic effect, or make a breading with chopped dried fruit, such as pistachios or almonds. We used tender tuna slices without ribs and bones, so that, once cooked, they can be cut into thick slices and served accompanied with some rocket salad and gods fresh cherry tomatoes; for a very refined touch, it is possible to garnish the tuna with a drizzle of Modena balsamic vinegar glaze.

The cooking times of tuna with sesame are very fast, just to avoid it being stringy: if you prefer that the heart remains practically rawcook it only one minute per side, but in this case we recommend using the fish killed.

How to prepare sesame tuna

Rinse the tuna fillets under cold running water and arrange them on a plate 1.

Pour the extra virgin olive oil into a deep plate 2.

Add a pinch of salt 3.

Add the freshly ground mixed pepper 4.

Sprinkle the lemon juice 5.

Stir to emulsify the dressing 6.

Dip the tuna in the dressing 7.

Flip the tuna fillet to flavor on both sides 8.

Pour a generous amount of sesame seeds into a dish 9.

Pass the tuna fillets in the sesame seeds, press lightly with your hands to make the seeds adhere well to the fish 10.

Turn it over to bread the other side and edges with the seeds 11.

Cook the sesame tuna on the hot plate over medium heat for about 4 minutes per side 12. Cooking times depend on the thickness of the tuna. However, we advise you not to prolong cooking for too long to prevent the tuna from becoming stringy.

Once cooked, transfer the sesame tuna to a cutting board 13.

Quickly cut the sesame tuna into slices one centimeter thick 14.

Tuna with sesame is consumed freshly prepared or at most during the day by keeping it in the refrigerator, closed in an airtight container. It can be heated for a few minutes on the plate before serving it at the table.
