How to prepare chickpea nuggets

To prepare the chickpea nuggets, start by taking the chickpeas, which you have previously cooked or bought in a jar. Put them in a bowl and mix them with an immersion blender: you should obtain a smooth and homogeneous mixture 1.

Add smoked paprika, garlic powder, onion powder, extra virgin olive oil and rolled oats 2.

Mix well and combine all the ingredients 3. The dough should be easy to work with: if it seems too dry, add a little water, otherwise add a little flour.

Take a few pieces of dough, work it with your hands in order to obtain oval-shaped meatballs and keep them aside 4.

At this point, crumble the corn flakes with the bottom of a glass and bread the chickpea balls 5.

Prepare a frying pan with plenty of oil and wait until it reaches 175°C. If you don’t have a cooking thermometer, you can check the oil temperature with one of the alternative homemade methods. Fry the croquettes in hot oil for a few minutes, until golden brown 6.

The chickpea nuggets are ready: serve them with a yogurt sauce 7.

Tips

You can prepare me chickpea nuggets also cooked: just place them on a baking sheet lined with parchment paper, drizzle them with oil and cook over low heat 180°C for 20/25 minutestaking care to turn them over halfway through cooking.

Fried chickpea nuggets are delicious hot. If you have leftovers, however, you can keep them in the refrigerator by 2-3 dayssealed in an airtight container. We advise you to heat them for a few seconds in the microwave before serving them: they will lose their initial crunch, but they will remain delicious.
