The Recipe Kung Pao Shrimp

Cook Time: 15 minutes
– 8 oz cup chilies (or Chinese chilies) – 1/2 tsp toasted sesame oil – 2 tbsp white or granulated sugar – 3 tbsp rice wine vinegar – 2 tbsp Chinese black vinegar (or balsamic) – 1 tbsp soy sauce – 1 tbsp Chinese cooking wine – 1 tbsp dark soy sauce – 3 tbsp cooking oil or lard – 6 cloves garlic, minced – 2 tsp grated ginger root – 1 lb medium shrimp, shelled, deveined and heads removed
1. Combine chilies with sesame oil in a bowl, using a wooden spoon to mash chilies. Add sugar, both kinds of vinegar, soy sauce, Chinese cooking wine, and dark soy sauce.
2. Heat oil in a wok or large frying pan over high heat until hot, stirring constantly (about 30 seconds). Add chilies mixture and boil for 1 minute.
3. Add shrimp and cook for about 3-5 minutes or until they turn orange, stirring constantly.
4. Mix in garlic and ginger. Stir fry for about 1 minute or until cooked through, mixing chilies with the shrimp. Serve immediately over cauliflower fried rice (see recipe below).
