Zest the courgettes with a fork, then cut them into slices and make perpendicular incisions on each slice to facilitate cooking. Season with salt and pepper. In a bowl, beat the eggs with the sour cream, cornstarch, dry basil, paprika and salt. Dip the zucchini slices first in the flour and then in the egg mixture. Transfer them to the mold and bake at 180°C for 20 minutes. Meanwhile, cut the tomatoes into small pieces and mix them with the minced garlic. Scatter the diced tomatoes and cheese over the cooked zucchini, then bake for another 20 minutes. Serve the zucchini pizzas with a basil leaf.
