The rolls of zucchini with tomato I’m a second summer dish simple and tasty, perfect to serve a cena or for one rich buffet. I’m really easy to prepare: just cut the courgettes into thin strips, stuff them with the filling, roll them up, dress them with the tomato sauce and let them cook in the oven for half an hour.

To make the recipe more substantial we have chosen to stuff the courgette rolls with turkey, ricotta e cheese. For the vegetarian versioninstead, we recommend filling them with some mozzarella racy: they will become an excellent side dish. For a faster variantinstead, the turkey can be substituted with prosciutto o salami into cubes. In addition, our courgettes are baked raw: alternatively, they can be fried, roasted or cooked in a pan.

How to prepare zucchini rolls with tomato

Heat a little oil in a pan and brown the ground turkey 1. Meanwhile, cut the courgettes into thin strips 2 and season them with salt 3.

In a bowl, mix the ricotta with the cheese, Parmesan, pepper, rosemary, thyme, garlic, basil and egg 4. Add the cooked turkey to the mixture 5 and amalgamates everything 6.

Arrange the filling over the entire length of the zucchini 7 and roll them up to form rolls 8. Spread the tomato sauce on the bottom of a baking dish 9.

Arrange the rolls on the baking sheet 10pour some sauce over the zucchini 11 and complete with more cheese and Parmesan 12.

The rolls of zucchini with tomato they can be kept in the fridge for a maximum of 2-3 days, covered with cling film or closed in an airtight container. It is advisable to heat them in the oven or in the microwave before serving.
