Eggplant pizzas: the recipe for a simple and tasty appetizer

The Eggplant Pizzas I am a antipasti simple and delicious, also ideal as finger food as an aperitif or as second light dish. To prepare them, simply cut the aubergines into slices, add tomato sliceextra virgin olive oil and herbs, before cooking in the oven for a quarter of an hour. We will add later Mozzarella and bake until stringy. Here’s how to prepare them in no time.

How to make eggplant pizza

Cut the eggplants and tomatoes into slices.

In a bowl, season the olive oil with salt, garlic powder, sweet paprika, dried oregano and pepper.

Pour a drizzle of oil on the parchment paper and arrange the eggplant slices. Brush the eggplants with seasoned oil.

Add tomatoes and brush with more seasoned oil. Bake in a static oven at 180°C for 15 minutes.

Place the mozzarella slices on each pizza, drizzle with oil and sprinkle with dried oregano. Bake another 15 minutes.

Eggplant pizzas are ready to be served.

You can store eggplant pizzas in the refrigerator for 1-2 daysinside an airtight container.
