Lemon jam: the recipe for making the preserve
There lemon jam it is a dense preserve with a very strong flavour, less widespread than the more classic ones, but still very good. To prepare it, you will need sterilized jars, water, lemons, sugar and vanilla essence. Once ready, it can be used to fill croissants and brioches to be enjoyed for breakfast or as a snack.

How to prepare lemon jam
Cut the lemons into slices and boil them in water for 30 minutes.
Blend the lemon slices with an immersion blender.
Transfer the smoothie to the pot, add the sugar and vanilla essence and mix well.
Put on the heat and cook for 30 minutes.
Sterilize glass jars by placing them in boiling water for about 30 minutes.
Fill the jars with lemon jam.
Make sure the lemons are blended well, so that no lumps remain.
Once ready, you can keep the jars in a cool, dry place, if well sealed, or in the fridge, if opened.
