Almond sweets: the recipe for typical Sicilian traditional pastries

THE almond sweets or more simply Almond pasteare typical pastries of Sicilian tradition: a mixture based on almond flour or chopped almonds, egg whites, sugar, honey, bitter almond flavoring and lemon zest, made by our “Giusina no stress in the kitchen”, which will help us make them at home in just a few steps. Once the dough has been prepared, it will have to rest in the fridge before making the pastries which we will decorate differently using candied cherries, almonds, icing sugar, pine nuts, chopped pistachios and chopped sugar. Once ready, enjoy them snackalong with a cup of tea, or serve them as dessert at the end of the meal. Here are the steps to make them.

Peeled almonds or almond flour

Grated lemon zest

How to prepare almond sweets

Whip the egg whites until stiff.

Combine the sugar with the almond flour, then add the egg whites, honey, bitter almond flavoring and grated lemon peel.

Mix with the sugar and let it rest in the fridge for an hour.

Then make the shapes you prefer and put in the fridge overnight: to make the pine nuts and the chopped sugar and pistachios stick, brush the sweets with egg white.

Cook in the oven at 180°C for 10-15 minutes.

The almond sweets are ready to be enjoyed.

Almond sweets can be stored for 2-3 weeks at room temperature, inside an airtight container or in a tin can.
