L’capricious salad it is a simple but very tasty dish, typical of Piedmontese cuisine. A antipasti feast based on julienned carrots and celeriac, diced cooked ham and strips of cheese, richly seasoned with a delicious sauce obtained by mixing mayonnaise with sweet mustard.

Similar to the Russian salad, it differs above all in the method of preparing the vegetables which, in the first case, are blanched in boiling water, whereas here they are finely cut with a knife and left to macerate raw in a bowl with vinegar and a pinch of salt. Once ready, you can serve it in a single tray, to open a breakfast or a cena with special guests, offer it in attractive individual portions at tea timeaperitif or use it to fill mouthwatering sandwiches and sandwiches.

For best results, we suggest collecting the vegetables, as they are sliced, in a bowl with acidulated ice water with a little lemon juice: this way they will not darken and will remain firm and crisp.

From this recipe exists many variantsmade with the addition of the most varied ingredients: capers, gherkins, tuna fillets in oil, peppers, grilled chicken, prawns, smoked salmon… If you wish, for a lighter result, you can replace the mayonnaise with the same amount of Greek yogurtor you can flavor the salad with a pinch of turmeric or chopped chives.

How to prepare a capricious salad

Cut the carrots, peel them, cut them finely with a potato peeler 1 and cut them into julienne. As they are ready, collect them in a bowl with ice water and the juice of 1/2 lemon: this way they will remain crunchy and will not darken.

Proceed in the same way with the celeriac 2 and, once sliced, put it in another bowl with cold water and the remaining lemon juice.

Drain the vegetables and transfer them to a large bowl; then pour the vinegar 3 and season with salt.
