I sweet and sour cucumbers I’m a conserva appetizing and tasty, perfect for the summer season when these delicious, firm and crunchy vegetables abound on the market stalls. Then just peel the cucumbers, cut them into thin slices of 5-7 mm thick and collect them in a colander, with the onion sliced ​​and coarse salt, for a couple of hours. After the time has elapsed, they will then be scalded in a water-based solution, vinegar e sugarflavored with spices and aromatic herbs, transferred to sterilized jars, and placed upside down to create the vacuum packed; then they will come pasteurized in boiling water for half an hour and left to cool in their liquid.

The result will be very tasty cucumbers, with a typical sweet and sour taste, perfect to nibble at lunchtime.aperitif. Once ready, the cucumbers should be kept in a cool and dry place, away from heat sources, for at least 1 month before consuming them: in this way they will keep longer and will be even better. How to make sweet and sour cucumbers

First sterilize the glass jars and let them dry perfectly. Then wash the cucumbers and dab them 1 well with a clean tea towel.

Dip the glass jars in a pot filled with water and wrap them with a tea towel 15 so as not to break them; then put on medium heat and let it simmer for half an hour. After the time has elapsed, turn off the heat and let the jars cool in the water; then dry them and store them for at least 1 month in a cool, dry and dark place.

Advice

For best results, we suggest you cut the cucumbers into rounds same size: in this way the cooking will take place evenly and will flavor to the fullest.

If you prefer you can replace them with i gherkinsto be prepared whole and with all the peel: in this case the sweet and sour taste will penetrate less persistently than cucumbers cut into slices

If you like, you can add 1 clove of minced garlic to the preserves, dill and peppercorns of different qualities, or add the seeds of coriandera pinch of red pepper or grated lemon zest.

storage

Sweet and sour cucumbers can be stored in a cool, dry and dark place for at least 3 months. Once opened they can be kept in the fridge, inside the sterilized glass jars and well covered by the liquid 4 days massimo.
