How to prepare brioches and make them very soft

Dissolve half of the sugar and the dry brewer’s yeast in the lukewarm milk.

Let stand 10 minutes to activate the yeast.

Add the rest of the sugar, flour and salt and knead.

Add the butter and finish kneading well. Let rise for 2 hours.

Divide the dough into 6 balls and let them rise for 20 minutes.

Divide each ball into 3 balls, put them together in each muffin tin and let rise for another 20 minutes.

Brush the dough with the milk and bake at 180°C for 15 minutes.

Advice

To make sure that the brioches are really soft, pay attention to the yeast – put the container with the dough in a cool, dry and dark place.

Once ready, store the brioches in the pantry or under a glass bell: they will remain tender for a couple of days.
